Keto Instant Pot Mexican Beef

This instant pot Mexican beef is a perfect meal for all those people who love Mexican food.
Keto Instant Pot Mexican Beef

Yield: 6 servings
Time taken: 60 minutes (15minutes to prepare and 45 minutes to cook)
Ingredients
2½ pounds boneless beef short ribs,
1 tablespoon chili powder
1½ teaspoons kosher salt
1 tablespoon ghee or fat of choice
1 medium onion, thinly sliced
1 tablespoon tomato paste
6 garlic cloves, peeled and smashed
½ cup roasted tomato salsa
½ cup bone broth
½ teaspoon Red Boat Fish Sauce
freshly ground black pepper
½ cup minced cilantro (optional)
2 radishes, sliced (optional)

Recipe
Combine salt, beef, and chili in a bowl.
Press the “sauté” button of instant pot and add oil or ghee.
Add garlic and tomato paste. Stir well for 30 seconds.
Now add beef, fish sauce, salsa, and stock.
Close the lid and press the “cancel” button.
Cook the beef on high pressure for 35 minutes.
Once you hear the beep, unlock the lid.
Add salt and pepper according to taste.
Serve with radish. You can also use cilantro.
